- 2 lb lean steak (trimmed & cubed into 1-inch pieces)
- 1 tbsp olive oil
- 2 tbsp soy sauce
- 2 tbsp balsamic vinegar
- ½ tsp salt
- ½ tsp black pepper
- ½ tbsp garlic powder
- ¼ tsp crushed red pepper (optional)
- 3 cloves garlic (minced)
- 2 tbsp balsamic vinegar
- 2 tbsp low-sodium beef broth
- 1 tsp honey
- 1 tbsp soy sauce
- 1.5 lb baby gold potatoes (quartered)
- ½ tbsp olive oil
- ½ tsp salt
- ½ tsp black pepper
- ½ tbsp garlic powder
- 1 tsp paprika
- 12 oz fresh green beans (trimmed)

- ½ tsp salt

Instructions
- Marinate the Steak: In a large bowl, combine the cubed steak, olive oil, soy sauce, balsamic vinegar, salt, black pepper, garlic powder, crushed red pepper (if using), and minced garlic. Mix well, ensuring each steak bite is coated. Cover and refrigerate for at least 30 minutes.
- Preheat your oven to 425°F (220°C). On a baking sheet, spread out the quartered baby gold potatoes and drizzle with olive oil. Season with salt, black pepper, garlic powder, and paprika. Toss well to coat. Roast in the hot oven for about 20 minutes.
- Sear the Steak Bites: In a large skillet, heat a bit of olive oil over medium-high heat. Remove the steak bites from the marinade, letting the excess drip off. Sear the steak bites in batches for 2-3 minutes on each side.
- Make the Glaze: Add the balsamic vinegar, beef broth, and honey to the skillet, scraping up any bits left in the pan. Let it reduce until it thickens slightly. Return the steak bites to the skillet.
- Serve the steak bites alongside the roasted baby gold potatoes and fresh green beans. Drizzle any remaining glaze on top. Enjoy!
