- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- To taste, flaky sea salt for sprinkling
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the softened unsalted butter, granulated sugar, and brown sugar. Beat until light and fluffy, about 2-3 minutes.
- Mix in the vanilla extract.
- In a separate bowl, sift together the all-purpose flour and salt. Gradually add this mixture to the butter mixture, mixing until just combined.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- Scoop tablespoons of dough and roll them into balls. Place on a baking sheet lined with parchment paper, spacing them about 2 inches apart. Flatten each ball slightly and sprinkle with flaky sea salt.
- Bake for 10-12 minutes, or until edges are lightly golden.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Dough can be made ahead and stored in the fridge for up to 3 days. For decorative cookies, roll into a log and slice before baking.
