- 8 oz cream cheese, softened
- 1 tablespoon mayonnaise
- 1 teaspoon dill (fresh or dried)
- Salt and pepper to taste
- 4 slices of white or whole-grain bread
- Fresh dill sprigs for garnish (optional)
Instructions
- Prepare the cucumber: Start by washing the cucumber thoroughly. You can peel it if you prefer a tender bite, but leaving the skin on adds a lovely crunch and vibrant color.
- Slice the cucumber: Slice the cucumber into thin rounds, about 1/8 inch thick. The thinner, the better for a delicate sandwich!
- Make the creamy filling: In a mixing bowl, combine the softened cream cheese, mayonnaise, dill, salt, and pepper. Stir until smooth and creamy, ensuring all ingredients are well blended.
- Assemble the sandwiches: Spread a generous layer of the cream cheese mixture on one side of each slice of bread. Top two slices with cucumber rounds, making sure to cover the whole surface for that satisfying crunch.
- Finish it off: Place the remaining slices of bread, cream cheese side down, on top of the cucumber-covered slices. Press gently to seal.
- Cut & serve: With a sharp knife, cut the sandwiches into quarters or halves, depending on your preference. Serve with sprigs of fresh dill for that extra touch!
Notes
These sandwiches can be made a few hours in advance and stored in the fridge. Use a mandoline for even slices.
