Ingredients

  • 1.5 pounds boneless, skinless chicken breasts
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 2 tablespoons fajita seasoning
  • Salt and pepper to taste
  • Tortillas for serving
  • Optional toppings: avocado, sour cream, cheese, cilantro

Instructions

  1. Place the chicken breasts in the slow cooker, allowing their natural juices to become the base of your dish.
  2. Top with the sliced bell pepper, onion, and drained diced tomatoes.
  3. Sprinkle the fajita seasoning over everything and add salt and pepper to taste.
  4. Gently stir to combine all the ingredients.
  5. Cover and cook on low for 360 minutes or on high for 240 minutes, until the chicken is cooked through.
  6. Shred the chicken in the slow cooker using two forks and stir to mix everything evenly.
  7. Serve in warm tortillas with your choice of toppings.
