Description

Delightfully fluffy and sweet cupcakes and muffins that evoke cozy memories and are perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk (or your favorite non-dairy milk)
  • 2 large eggs
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • Optional mix-ins: 1 cup chocolate chips, nuts, or fresh fruit (like blueberries or raspberries)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your muffin tins or line them with paper liners.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt until combined.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix just until combined.
  6. If adding mix-ins, gently fold them in now.
  7. Scoop the batter into the prepared muffin tins, filling each cup about two-thirds full.
  8. Bake for 18-20 minutes, or until golden brown and a toothpick inserted comes out clean.
  9. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For a crunchy top, sprinkle some sugar over the batter before baking. Store in an airtight container, or freeze for longer shelf life.
