- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 cup milk (or your favorite non-dairy milk)
- 2 large eggs
- 2 tsp baking powder
- 1 tsp vanilla extract
- 1/2 tsp salt
- Optional mix-ins: 1 cup chocolate chips, nuts, or fresh fruit (like blueberries or raspberries)
Instructions
- Preheat your oven to 350°F (175°C). Grease your muffin tins or line them with paper liners.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt until combined.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix just until combined.
- If adding mix-ins, gently fold them in now.
- Scoop the batter into the prepared muffin tins, filling each cup about two-thirds full.
- Bake for 18-20 minutes, or until golden brown and a toothpick inserted comes out clean.
- Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For a crunchy top, sprinkle some sugar over the batter before baking. Store in an airtight container, or freeze for longer shelf life.
