Ingredients

  • 8 small tortillas

  • 1/2 cup chopped dill pickles
  • 2 tablespoons pickle brine
  • 1 cup shredded cabbage
  • 1/2 cup cottage cheese blended with 1 teaspoon ranch seasoning and a squeeze of lemon

Instructions

  1. In a medium-sized bowl, mix the ground chicken with garlic powder, paprika, salt, and pepper until well combined.
  2. Heat a skillet over medium heat and cook the chicken mixture, breaking it apart with a spatula, until fully cooked—about 7-10 minutes.
  3. While the chicken cooks, warm the tortillas in a separate pan until they become soft and slightly golden.
  4. In a non-stick skillet, melt shredded cheese over medium heat until it transforms into a crispy lace—this should take about 2-3 minutes. Remove and set aside to cool slightly.
  5. Once the chicken is ready, assemble your tacos by placing a generous scoop of the chicken mixture onto each tortilla followed by chopped dill pickles and shredded cabbage.
  6. Top with the creamy cottage cheese mixture and drizzle with pickle brine for that extra zing.
