Description
A delicious and easy-to-make taco recipe featuring zesty dill pickles, flavorful chicken, and a crispy cheese lace that adds a delightful crunch.
Ingredients
Scale
- 1 pound ground chicken
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and black pepper, to taste
- 8 small tortillas
- 1 cup shredded mozzarella or Jack cheese
- 1/2 cup chopped dill pickles
- 2 tablespoons pickle brine
- 1 cup shredded cabbage
- 1/2 cup cottage cheese blended with 1 teaspoon ranch seasoning and a squeeze of lemon
Instructions
- In a medium-sized bowl, mix the ground chicken with garlic powder, paprika, salt, and pepper until well combined.
- Heat a skillet over medium heat and cook the chicken mixture, breaking it apart with a spatula, until fully cooked—about 7-10 minutes.
- While the chicken cooks, warm the tortillas in a separate pan until they become soft and slightly golden.
- In a non-stick skillet, melt shredded cheese over medium heat until it transforms into a crispy lace—this should take about 2-3 minutes. Remove and set aside to cool slightly.
- Once the chicken is ready, assemble your tacos by placing a generous scoop of the chicken mixture onto each tortilla followed by chopped dill pickles and shredded cabbage.
- Top with the creamy cottage cheese mixture and drizzle with pickle brine for that extra zing.
Notes
Make-ahead chicken mixture and cheese lace can be prepared in advance; just reheat before serving.
