Ingredients

  • 4 chicken thighs
  • 4 carrots, chopped
  • 3 potatoes, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Season the chicken thighs with salt and pepper, then brown them for 3-4 minutes on each side until golden.
  2. Transfer the browned chicken to a crockpot, positioning them snugly at the bottom.
  3. Add the chopped carrots, potatoes, onion, and minced garlic on top of the chicken.
  4. Pour the chicken broth over the vegetables and chicken, covering them.
  5. Sprinkle the dried thyme and rosemary over the top.
  6. Cover and cook on low for 360 minutes or on high for 240 minutes, until the chicken is tender.
  7. Serve warm and enjoy your meal!
