A delightful combination of crispy panko-coated salmon bites served with a creamy sweet chili sauce, perfect for any occasion.

- 1 pound salmon fillets
- 1 cup panko breadcrumbs
- 1/4 cup flour
- 2 large eggs
- 1/2 cup cornstarch
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1 tablespoon Sriracha (or to taste)
- 2 green onions, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut the salmon fillets into bite-sized pieces.
- In a bowl, mix together the cornstarch, salt, and pepper. In another bowl, beat the eggs. In a separate bowl, place the panko breadcrumbs.
- Dredge each piece of salmon in the cornstarch mixture, dip it in the egg, and then coat with the panko breadcrumbs until well covered.
- Place the coated salmon bites on the prepared baking sheet, spacing them out evenly, and give them a light spray with oil.
- Bake for 12-15 minutes or until they are golden brown and crispy.
- In a small bowl, mix together the mayonnaise, sweet chili sauce, and Sriracha to taste.
- Serve the crispy salmon bites on a platter, drizzled with the sauce or on the side, and garnish with chopped green onions.
Notes
Make the bites ahead of time and refrigerate before baking. Substitute panko breadcrumbs for regular breadcrumbs if needed.
