Delicious crispy bacon honey roasted potatoes, perfect as a side dish for any meal.

- 2 lbs (900g) baby potatoes, halved
- 6 slices turkey bacon, chopped
- 3 tbsp olive oil
- 2 tbsp honey
- 1 tsp garlic powder
- ½ tsp smoked paprika
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash and dry the potatoes, then cut them in half for even cooking.
- Chop the turkey bacon into small pieces to allow it to crisp up.
- In a large mixing bowl, combine the halved potatoes, olive oil, garlic powder, smoked paprika, salt, and black pepper. Toss well to coat.
- Spread the potatoes out on the prepared baking sheet in a single layer.
- Scatter the chopped turkey bacon evenly over the potatoes.
- Place the baking sheet in the preheated oven and roast for 30-35 minutes, flipping the potatoes halfway through.
- Drizzle the honey over the potatoes and bacon during the last 5 minutes of roasting.
- Remove from the oven, let cool slightly, sprinkle with parsley, and serve.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven for best results.
