Description

Delicious crispy bacon honey roasted potatoes, perfect as a side dish for any meal.


Ingredients

  • 2 lbs (900g) baby potatoes, halved
  • 6 slices turkey bacon, chopped
  • 3 tbsp olive oil
  • 2 tbsp honey
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and dry the potatoes, then cut them in half for even cooking.
  3. Chop the turkey bacon into small pieces to allow it to crisp up.
  4. In a large mixing bowl, combine the halved potatoes, olive oil, garlic powder, smoked paprika, salt, and black pepper. Toss well to coat.
  5. Spread the potatoes out on the prepared baking sheet in a single layer.
  6. Scatter the chopped turkey bacon evenly over the potatoes.
  7. Place the baking sheet in the preheated oven and roast for 30-35 minutes, flipping the potatoes halfway through.
  8. Drizzle the honey over the potatoes and bacon during the last 5 minutes of roasting.
  9. Remove from the oven, let cool slightly, sprinkle with parsley, and serve.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven for best results.
