Description

Ingredients

  • 1 package tortellini (fresh or frozen)
  • 1 lb shrimp, peeled and deveined
  • 2 cups fresh spinach
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Cook the tortellini according to package instructions; drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and cook until fragrant.
  3. Add shrimp to the skillet and season with salt, pepper, and red pepper flakes. Cook until shrimp turn pink, about 3-4 minutes.
  4. Stir in the heavy cream and bring to a simmer, watching the mixture thicken.
  5. Add grated Parmesan cheese and stir until melted and smooth.
  6. Add fresh spinach and cook until wilted, about 1-2 minutes.
