Ingredients

- 2 fillets of salmon
- 150g fresh spinach
- 200g pasta (such as fettuccine or linguine)
- 1 cup heavy cream
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Parmesan cheese for serving
- Fresh herbs (like dill or parsley) for garnish
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Season the salmon fillets with salt and pepper, then place them in the skillet.
- Cook the salmon for about 4-5 minutes on each side, or until cooked through. Remove from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté until fragrant. Then, add the fresh spinach and cook until wilted.
- Pour in the heavy cream and stir to combine, letting it simmer for a couple of minutes.
- Flake the salmon into bite-sized pieces and add it to the cream sauce. Gently mix in the cooked pasta, coating it well with the sauce.
- Serve hot, garnished with grated Parmesan cheese and fresh herbs.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 2 days—reheat gently on the stove.
