Description

A comforting and creamy low-carb chicken casserole with broccoli and crunchy turkey bacon, perfect for busy weeknights.


Ingredients

  • 5 cups broccoli florets
  • 8 slices cooked turkey bacon, chopped
  • 4 cups cooked chicken, shredded or diced
  • 3 cloves garlic, minced
  • ½ cup shredded mozzarella
  • ½ cup shredded cheddar
  • 1 cup ranch dressing
  • ½ cup shredded cheddar (for topping)
  • ½ cup shredded mozzarella (for topping)

Instructions

  1. Preheat your oven to 375°F and lightly grease a 9×13-inch baking dish.
  2. Steam or blanch the broccoli until just tender, then drain and set aside.
  3. Mix together the cooked chicken, broccoli, turkey bacon, garlic, mozzarella, cheddar, and ranch dressing in a large bowl.
  4. Spread the mixture evenly into the prepared baking dish.
  5. Sprinkle the top with ½ cup of shredded cheddar and ½ cup of shredded mozzarella.
  6. Bake for 25–30 minutes, or until hot and bubbly with golden cheese.
  7. Let rest for 5–10 minutes before serving.
