- 2 cups cooked rice
- 2–3 chicken breasts (boneless, skinless)
- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- 1 cup shredded cheese (Gruyère or Swiss)
- 1 cup chicken broth
- 1/2 cup sour cream
- 1 tablespoon olive oil
- 1 teaspoon thyme
- Salt and pepper, to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Add sliced onions and cook until golden and caramelized, about 10-15 minutes, stirring frequently.
- Add minced garlic to the caramelized onions and sauté for another minute.
- Season chicken breasts with salt, pepper, and thyme. Push onion mixture to the side and add chicken to the skillet, cooking until browned on both sides.
- Pour in chicken broth, bring to a simmer, cover, and cook until chicken is fully cooked through, about 15-20 minutes.
- Remove chicken from skillet and shred with two forks. Return chicken to skillet, mixing with the onions.
- Stir in cooked rice, sour cream, and shredded cheese until well combined and heated through.
- Serve warm and enjoy!
Notes
Prepare the rice ahead of time for quicker preparation. Any meltable cheese can be used if Gruyère or Swiss is unavailable.
