- 2 cups cooked shredded chicken
- 1 cup turkey sausage, sliced
- 2 cans white beans, drained and rinsed
- 1 small onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tablespoon olive oil
- 1 tablespoon Cajun seasoning
- 1 teaspoon paprika
- ½ teaspoon black pepper
- ½ teaspoon salt
- 1 cup diced green chilies
- 1 avocado, diced
- Fresh parsley
- Juice of 1 lime
Instructions
- Heat olive oil in a large pot and sauté onion until soft. Add garlic and cook briefly.
- Add turkey sausage and cook until slightly browned.
- Stir in Cajun seasoning, paprika, salt, and pepper. Pour in chicken broth and simmer for 10 minutes.
- Add shredded chicken, white beans, and green chilies. Simmer for 10–15 minutes.
- Reduce heat and stir in heavy cream until smooth and creamy.
- Add lime juice and adjust seasoning.
- Serve hot topped with avocado and parsley.
Notes
Use rotisserie chicken for convenience. Adjust spice level with Cajun seasoning. Add toppings just before serving for best freshness.
