This creamy Cajun white chicken chili is a rich, cozy one-pot meal packed with tender chicken, white beans, and smoky turkey sausage. Infused with bold Cajun spices and finished with a silky cream base, it’s the ultimate comforting dinner for chilly nights.

  • 2 cups cooked shredded chicken
  • 1 cup turkey sausage, sliced
  • 2 cans white beans, drained and rinsed
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 1 cup diced green chilies
  • 1 avocado, diced
  • Fresh parsley
  • Juice of 1 lime

Instructions

  1. Heat olive oil in a large pot and sauté onion until soft. Add garlic and cook briefly.
  2. Add turkey sausage and cook until slightly browned.
  3. Stir in Cajun seasoning, paprika, salt, and pepper. Pour in chicken broth and simmer for 10 minutes.
  4. Add shredded chicken, white beans, and green chilies. Simmer for 10–15 minutes.
  5. Reduce heat and stir in heavy cream until smooth and creamy.
  6. Add lime juice and adjust seasoning.
  7. Serve hot topped with avocado and parsley.

Notes

Use rotisserie chicken for convenience. Adjust spice level with Cajun seasoning. Add toppings just before serving for best freshness.
