Description

Ingredients

  • 6 large eggs
  • 2 cups cottage cheese
  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
  • 1 cup chopped spinach
  • 1/2 cup bell pepper, diced
  • 1/2 cup onion, diced
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F.
  2. In a large mixing bowl, whisk together the eggs until frothy, then stir in the cottage cheese.
  3. Mix in the chopped vegetables, garlic powder, onion powder, salt, and pepper.
  4. Fold in the shredded cheese.
  5. Pour the mixture into a greased 9 x 9 inch baking dish and spread it out.
  6. Bake for 40-45 minutes or until the center is set and golden.
  7. Let it cool for a few moments before serving.
