Delight in these Cookie Monster Cinnamon Rolls, featuring vibrant blue swirls and a blend of cinnamon and cookie pieces.

Ingredients

Scale
  • ¾ cup warm milk (110°F)
  • 2¼ tsp active dry yeast (1 packet)
  • ¼ cup granulated sugar
  • 1 large egg + 1 egg yolk
  • ¼ cup unsalted butter, melted
  • 3 cups all-purpose flour
  • ½ tsp salt
  • 1 tsp vanilla extract
  • Blue gel food coloring
  • ½ cup unsalted butter, softened
  • ¾ cup brown sugar
  • 2 tbsp ground cinnamon
  • ½ cup crushed chocolate sandwich cookies (like Oreos)
  • ¼ cup mini chocolate chips
  • 4 oz cream cheese, softened
  • ¼ cup unsalted butter, softened
  • 1 cup powdered sugar
  • ½ tsp vanilla extract
  • 23 tbsp milk (adjust for consistency)
  • ½ cup crushed chocolate cookies
  • Extra mini chocolate chips (optional)

Instructions

  1. In a bowl, combine warm milk and yeast. Let sit for 5 minutes until foamy.
  2. Stir in sugar, egg, yolk, melted butter, and vanilla extract.
  3. Add 2 cups of flour and salt. Mix well, then slowly add the remaining flour.
  4. Once combined, add blue food coloring and knead until smooth and evenly colored.
  5. Transfer to a greased bowl, cover, and let rise for 1–1½ hours.
  6. In a mixing bowl, combine softened butter, brown sugar, and cinnamon. Stir in the crushed cookies and chocolate chips until thoroughly mixed.
  7. On a floured surface, roll your dough into a 14×9” rectangle and spread filling evenly over the surface.
  8. Roll the dough tightly from the long side and slice it into 12 rolls.
  9. Place the rolls in a greased 9×13” dish. Cover and let rise for 30–45 minutes.
  10. Preheat your oven to 350°F. Bake rolls for 20–25 minutes, or until golden brown.
  11. In a bowl, beat cream cheese and softened butter until smooth. Gradually add powdered sugar, vanilla, and milk, mixing until creamy.
  12. Drizzle the warm icing generously over the cinnamon rolls and sprinkle with remaining crushed cookies and extra chocolate chips if desired.
