Description

A warm blend of creamy mashed potatoes and sautéed vegetables, perfect for cozy weeknight dinners.


Ingredients

Scale
  • 2 pounds potatoes
  • 4 tablespoons butter
  • 1 cup cabbage, chopped
  • 4 slices turkey bacon, cooked and crumbled
  • 1 cup leeks, chopped
  • 1/2 cup scallions, chopped
  • Salt and pepper to taste

Instructions

  1. Peel and chop the potatoes. Place them in a pot of salted water and bring to a boil. Cook until the potatoes are tender.
  2. While the potatoes are cooking, melt 2 tablespoons of butter in a skillet and sauté the leeks and cabbage over medium heat until soft and fragrant.
  3. Once the potatoes are cooked and drained, return them to the pot. Mash in the remaining butter until creamy and smooth.
  4. Fold in the sautéed vegetables, crumbled turkey bacon, and chopped scallions. Mix thoroughly until well combined.
  5. Season with salt and pepper to taste, allowing the flavors to shine through.
  6. Serve warm as a lovely side dish that will have everyone asking for seconds!

Notes

Great when made ahead of time. Store leftovers in an airtight container for up to 3 days in the refrigerator.
