A warm blend of creamy mashed potatoes and sautéed vegetables, perfect for cozy weeknight dinners.

- 2 pounds potatoes
- 4 tablespoons butter
- 1 cup cabbage, chopped
- 4 slices turkey bacon, cooked and crumbled
- 1 cup leeks, chopped
- 1/2 cup scallions, chopped
- Salt and pepper to taste
Instructions
- Peel and chop the potatoes. Place them in a pot of salted water and bring to a boil. Cook until the potatoes are tender.
- While the potatoes are cooking, melt 2 tablespoons of butter in a skillet and sauté the leeks and cabbage over medium heat until soft and fragrant.
- Once the potatoes are cooked and drained, return them to the pot. Mash in the remaining butter until creamy and smooth.
- Fold in the sautéed vegetables, crumbled turkey bacon, and chopped scallions. Mix thoroughly until well combined.
- Season with salt and pepper to taste, allowing the flavors to shine through.
- Serve warm as a lovely side dish that will have everyone asking for seconds!
