- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, softened
- 1 cup milk
- 2 large eggs
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup chopped walnuts or pecans (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then gently stir in the vanilla.
- Combine the flour, baking powder, baking soda, salt, and cinnamon in a separate bowl.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk.
- Pour half of the batter into the prepared pan and sprinkle with half of the crumb topping.
- Add the remaining batter on top and sprinkle the rest of the crumb topping over it.
- Bake for 30-35 minutes or until a toothpick inserted comes out clean.
- Let it cool for a few minutes before serving.
Notes
For perfect slices, let the coffee cake cool completely before cutting. Use a buttered knife for smooth edges.
