Description

Delicious Coconut Oatmeal Cookies packed with oats and sweetened coconut flakes, perfect for cozy gatherings or a sweet treat.


Ingredients

  • 1 1/4 Cups of flour
  • 1/2 Cup of room temperature butter (1 stick)
  • 1/2 Cup white sugar
  • 1/2 Cup brown sugar
  • 1 Cup of sweetened coconut flakes
  • 1 Cup Old Fashioned Oats
  • 1 Egg
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the room temperature butter, white sugar, and brown sugar until light and fluffy.
  3. Add in the vanilla extract and egg, stirring until fully incorporated.
  4. Sift in the salt, flour, baking powder, and baking soda. Stir until just combined.
  5. Fold in the old-fashioned oats and coconut flakes.
  6. Spoon out dollops of dough onto a greased baking sheet, rolling each into a ball.
  7. Bake for 15 minutes or until golden-brown around the edges.
  8. Cool on the baking sheet for about 3 minutes before transferring to a wire rack.

Notes

You can prepare the dough in advance and refrigerate it for up to three days before baking.
