- 1 1/4 Cups of flour
- 1/2 Cup of room temperature butter (1 stick)
- 1/2 Cup white sugar
- 1/2 Cup brown sugar
- 1 Cup of sweetened coconut flakes
- 1 Cup Old Fashioned Oats
- 1 Egg
- 1/2 teaspoon vanilla extract
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the room temperature butter, white sugar, and brown sugar until light and fluffy.
- Add in the vanilla extract and egg, stirring until fully incorporated.
- Sift in the salt, flour, baking powder, and baking soda. Stir until just combined.
- Fold in the old-fashioned oats and coconut flakes.
- Spoon out dollops of dough onto a greased baking sheet, rolling each into a ball.
- Bake for 15 minutes or until golden-brown around the edges.
- Cool on the baking sheet for about 3 minutes before transferring to a wire rack.
Notes
You can prepare the dough in advance and refrigerate it for up to three days before baking.
