Ingredients

  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups vegetable or chicken broth
  • 1 cup sausage (e.g., kielbasa or smoked sausage), sliced
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, sauté the onion, carrots, and celery until softened.
  2. Add the diced potatoes and broth. Bring to a boil, then reduce to a simmer.
  3. Cook until the potatoes are tender, about 15-20 minutes.
  4. Stir in the sausage and simmer for an additional 5 minutes.
  5. Remove from heat and stir in the heavy cream. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh parsley.
