Ingredients

- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups vegetable or chicken broth
- 1 cup sausage (e.g., kielbasa or smoked sausage), sliced
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, sauté the onion, carrots, and celery until softened.
- Add the diced potatoes and broth. Bring to a boil, then reduce to a simmer.
- Cook until the potatoes are tender, about 15-20 minutes.
- Stir in the sausage and simmer for an additional 5 minutes.
- Remove from heat and stir in the heavy cream. Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
