- 1 cup white rice
- 2 cups water
- 1 can black beans, rinsed and drained
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 2 tablespoons olive oil
- Salt to taste
Instructions
- In a pot, bring the water to a boil. Add the rice, cover, and reduce heat to low. Cook for about 18-20 minutes or until the water is absorbed.
- In a separate pan, heat the olive oil over medium heat and add the black beans. Cook until heated through, stirring gently to combine with the oil.
- Once the rice is done, fluff it with a fork and then stir in the lime juice, chopped cilantro, and salt to taste.
- Serve the fluffy cilantro lime rice topped with the warm black beans.
Notes
This dish can be made in advance and stored for up to 3 days. Leftovers can be reheated in the microwave with a splash of water.
