Description

Delightfully nostalgic cherry muffins topped with a crunchy streusel, perfect for brunch or a cozy afternoon treat.


Ingredients

  • 1 cup fresh cherries, pitted and halved
  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 1 large egg
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. Combine the all-purpose flour, baking powder, and salt in another bowl.
  5. Gradually add the dry mixture to the creamed mixture, alternating with the milk.
  6. Fold in the halved cherries until evenly distributed.
  7. Mix the brown sugar, rolled oats, softened butter, and cinnamon for the streusel topping.
  8. Fill each muffin cup with the batter and top generously with streusel.
  9. Bake for 20-25 minutes or until a toothpick comes out clean.
  10. Allow to cool slightly before serving.

Notes

These muffins can be made ahead by prepping the batter the night before and baking fresh in the morning. Store leftovers in an airtight container for up to 3 days.
