Description

Ingredients

  • 1 cup brown sugar, lightly packed
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour
  • 1 cup old fashioned rolled oats
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 1/2 cups finely grated carrots
  • 1 cup unsweetened coconut
  • 1 cup California raisins
  • 6 ounces cream cheese, softened
  • 8 tablespoons butter, softened
  • 1 teaspoon vanilla
  • 2 1/3 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F. Line several baking sheets with parchment paper and set aside.
  2. Cream the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the eggs and vanilla, mixing well until fully combined.
  4. Stir in the flour, rolled oats, baking soda, baking powder, cinnamon, and salt until just combined.
  5. Fold in the finely grated carrots, unsweetened coconut, and California raisins until evenly distributed throughout the dough.
  6. Drop the dough onto prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 9-10 minutes, or until edges begin to brown and cookies look set.
  8. Cool cookies on baking sheets for 5 minutes before transferring to a wire rack.
  9. Whip together cream cheese, 8 tablespoons of butter, and vanilla until smooth for frosting.
  10. Gradually add powdered sugar, mixing until frosting is creamy.
  11. Spread 1 tablespoon of frosting on one cookie and top with another, pressing gently together.
  12. Allow frosted cookies to set for 1-2 hours before serving.

Notes

Store leftovers in an airtight container in the refrigerator for 5-7 days. Can be made ahead of time, and the dough can be refrigerated or frozen.
