Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 cup long-grain rice
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes with green chilies
  • 2 cups chicken broth
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat until shimmering.
  2. Add the onion and bell pepper, cooking until softened, about 3-4 minutes.
  3. Stir in the garlic and cook for another minute.
  4. Cook the shrimp until they turn pink, about 2-3 minutes.
  5. Pour in the rice, diced tomatoes, chicken broth, and Cajun seasoning; stir everything together.
  6. Bring to a boil, then reduce heat to low and cover the skillet.
  7. Cook for about 20 minutes or until the rice is tender.
  8. Season with salt and pepper to taste.
  9. Garnish with chopped parsley before serving.
