- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes with green chilies
- 2 cups chicken broth
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- Chopped parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat until shimmering.
- Add the onion and bell pepper, cooking until softened, about 3-4 minutes.
- Stir in the garlic and cook for another minute.
- Cook the shrimp until they turn pink, about 2-3 minutes.
- Pour in the rice, diced tomatoes, chicken broth, and Cajun seasoning; stir everything together.
- Bring to a boil, then reduce heat to low and cover the skillet.
- Cook for about 20 minutes or until the rice is tender.
- Season with salt and pepper to taste.
- Garnish with chopped parsley before serving.
