Description

A vibrant and colorful tortellini salad perfect for picnics and potlucks, combining fresh ingredients with a tangy dressing.


Ingredients

  • 12 ounces tortellini (cooked and cooled)
  • 1 cup cherry tomatoes (halved)
  • 1 cup cucumber (diced)
  • 1/2 red onion (diced)
  • 1/2 cup black olives (sliced)
  • 1/2 cup salami (chopped)
  • 1/2 cup provolone cheese (cubed)
  • 1/4 cup fresh basil (chopped)
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Combine the cooked and cooled tortellini, cherry tomatoes, cucumber, red onion, black olives, salami, provolone cheese, and fresh basil in a large bowl.
  2. Whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper in a smaller bowl until well combined.
  3. Pour the dressing over the salad and toss gently to combine all the flavors beautifully.
  4. Chill in the refrigerator for at least 30 minutes before serving. Enjoy!
