Ingredients

  • 34 ripe bananas (about 2 cups mashed)
  • 1/3 cup salted butter (melted)
  • 3/4 cup granulated sugar
  • 1 large egg (beaten)
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1 cup chopped walnuts (or chocolate chips, plus extra for topping if desired)

Instructions

  1. Preheat your oven to 350℉ (177℃). Lightly grease and flour an 8.5×4.5-inch loaf pan or spray with baking spray.
  2. Combine the mashed bananas with the melted butter in a large mixing bowl.
  3. Stir in the sugar, beaten egg, and vanilla extract using a wooden spoon.
  4. Sprinkle the baking soda, baking powder, ground cinnamon, and salt over the banana mixture and mix gently.
  5. Gradually add the flour and mix just until no streaks of flour remain.
  6. Fold in the chopped walnuts or chocolate chips until evenly distributed.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes, or until a knife inserted comes out clean.
  9. Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

To achieve neat slices, use a serrated bread knife and ensure the loaf has cooled completely. Store leftovers in an airtight container for up to one week, or freeze for up to 3 months.
