  • 4 cups beef broth
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 2 stalks celery, sliced
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons dried thyme
  • Salt and pepper, to taste
  • 8 ounces egg noodles
  • Optional: fresh parsley, chopped (for serving)

Instructions

  1. Begin by seasoning the cubed beef chuck roast generously with salt and pepper.
  2. Add the seasoned beef along with diced onion, minced garlic, sliced carrots, and celery to your slow cooker.
  3. Pour in the beef broth and Worcestershire sauce, then sprinkle in the dried thyme. Stir gently to incorporate all the ingredients.
  4. Lock the lid in place and set your crock pot to low. Let it cook for 6-8 hours, or until the beef is tender.
  5. About 30 minutes before serving, add in the egg noodles to the slow cooker. Stir well, ensuring the noodles are fully immersed in the delicious broth.
  6. Once the noodles are tender, give it one last stir and taste the dish. Adjust the seasoning if necessary.
  7. Serve in warm bowls, garnished with fresh parsley if desired.

Notes

If you’re short on time, sear the beef in a skillet before adding it to the slow cooker for extra flavor. This dish can be made ahead and stored in the fridge for up to 3 days.
