- 2 pounds beef chuck roast, cut into 1-inch cubes
- 4 cups beef broth
- 1 onion, diced
- 3 cloves garlic, minced
- 3 carrots, sliced
- 2 stalks celery, sliced
- 1 tablespoon Worcestershire sauce
- 2 teaspoons dried thyme
- Salt and pepper, to taste
- 8 ounces egg noodles
- Optional: fresh parsley, chopped (for serving)
Instructions
- Begin by seasoning the cubed beef chuck roast generously with salt and pepper.
- Add the seasoned beef along with diced onion, minced garlic, sliced carrots, and celery to your slow cooker.
- Pour in the beef broth and Worcestershire sauce, then sprinkle in the dried thyme. Stir gently to incorporate all the ingredients.
- Lock the lid in place and set your crock pot to low. Let it cook for 6-8 hours, or until the beef is tender.
- About 30 minutes before serving, add in the egg noodles to the slow cooker. Stir well, ensuring the noodles are fully immersed in the delicious broth.
- Once the noodles are tender, give it one last stir and taste the dish. Adjust the seasoning if necessary.
- Serve in warm bowls, garnished with fresh parsley if desired.
Notes
If you’re short on time, sear the beef in a skillet before adding it to the slow cooker for extra flavor. This dish can be made ahead and stored in the fridge for up to 3 days.
