Description

A cozy weeknight dish featuring sautéed veggies, savory turkey, and a creamy bang bang sauce.


Ingredients

  • 1 lb ground turkey
  • 2 cups cooked jasmine rice
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 cup chopped red bell pepper
  • 1 cup chopped carrots
  • 1 cup chopped broccoli
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Cook jasmine rice according to package instructions.
  2. In a small bowl, mix mayonnaise, sweet chili sauce, sriracha sauce, and lime juice to create the bang bang sauce. Set aside.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add ground turkey to the skillet, breaking it apart, and cook until browned.
  5. Add soy sauce, salt, and pepper to the cooked turkey, stirring well.
  6. Add chopped red bell pepper, carrots, and broccoli, cooking for another 5-7 minutes until tender-crisp.
  7. Remove from heat and mix in half of the bang bang sauce.
  8. Serve cooked jasmine rice in bowls, topped with the turkey and vegetable mixture.
  9. Drizzle remaining bang bang sauce over each bowl, garnishing with green onions and sesame seeds.
