- 1 lb ground turkey
- 2 cups cooked jasmine rice
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1 tablespoon sriracha sauce
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 cup chopped red bell pepper
- 1 cup chopped carrots
- 1 cup chopped broccoli
- 1 tablespoon olive oil
- Salt and pepper to taste
- 2 green onions, sliced
- 1 tablespoon sesame seeds
Instructions
- Cook jasmine rice according to package instructions.
- In a small bowl, mix mayonnaise, sweet chili sauce, sriracha sauce, and lime juice to create the bang bang sauce. Set aside.
- Heat olive oil in a large skillet over medium-high heat.
- Add ground turkey to the skillet, breaking it apart, and cook until browned.
- Add soy sauce, salt, and pepper to the cooked turkey, stirring well.
- Add chopped red bell pepper, carrots, and broccoli, cooking for another 5-7 minutes until tender-crisp.
- Remove from heat and mix in half of the bang bang sauce.
- Serve cooked jasmine rice in bowls, topped with the turkey and vegetable mixture.
- Drizzle remaining bang bang sauce over each bowl, garnishing with green onions and sesame seeds.
