Description

These Banana S’mores Muffins are a delightful blend of gooey chocolate, fluffy marshmallows, and comforting banana goodness, perfect for cozy autumn days.


Ingredients

  • 2 ripe bananas, mashed
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup chocolate chips
  • 1/2 cup mini marshmallows
  • 1/4 cup graham cracker crumbs
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the mashed bananas, vegetable oil, egg, and vanilla extract until mixed.
  3. In another bowl, whisk together the flour, sugar, brown sugar, baking soda, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fold in the chocolate chips, mini marshmallows, and graham cracker crumbs.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

For added flavor, use riper bananas and avoid overmixing the batter. Store leftovers in an airtight container.
